Its that marvelous time of year, again, when using the oven is a good thing. Not only for the delicious morsels that can come out of it, but for standing in front of it basking in the heat once the baking is done. Aaaahhhhh!!!! Here’s one of my favourites for this time of the year in several variations. Enjoy!
Baked Oatmeal
1 ½ Cups Brown sugar
½ Cup Melted Butter
4 Eggs
4 tsp Baking Powder
1 Tsp Salt
1 Tbsp Cinnamon
1 ½ Cups Milk
4 ½ Cups Old Fashioned Oats
Combine all ingrediants. Add Fruits, Nuts, spices, Etc. to flavor. Spread into a greased/buttered 13×9 baking dish. Bake at 350 F for 30-40 mins.
Blueberry Almond Vanilla Chip:
Only use ¾ cup brown Sugar
Delete melted butter from recipe
Add 1 Small Can Blueberry baking/pie filling OR 1 small jar blueberry preserves
Add 1 pkg dried blueberried
Add 1 small pkg slivered Almonds
Top with 2-3 handfulls of Vanilla/White chocolate Baking Morsals ( toll house !)
Cranberry Hazelnut Orange:
Only use ¾ cup brown Sugar
Delete melted butter from recipe
Add 1 pkg dried cranberries
Add 1 small can mandarin orange pieces- drained
Add 1 Small jar Orange marmalade ( or if you can find Cranberry Orange )
Add 1 small pkg hazelnuts
Other possibilites:
Cranberry Apple Walnut – Dried or fresh Cranberries/ Apple Jam or Apple Butter/ Sugar and Spiced Walnuts.
Lemon Strawberry Almond- Dried Strawberries/Slivered Almonds and Lemon Curd melted and drizzled over top.
Raisin Walnut & Dates- equal portions for all three and extra sugar and spice to make it nice!
Banana OR Pumpkin Pecan Chocolate Chip- use overripe bananas or canned pumpkin and sugared or plain pecans.YUM!!!
