If not for the photographer’s Lens,
Would we Truly See?
If not for the Poet’s Words,
Would we Truly Appreciate?
If not for the Courage of the Soldier,
Would we Truly Understand?
For their Sacrifice, and for all they do without Thanks, without Notice, Their Courage Speaks.

MMMM! Chicken and Cheese Burritos as Easy as Throwing some ingredients in the slow cooker? Yes Yes!!
Start with these:
2-3 Frozen Boneless, Skinless Chicken Breasts
1 can Cream of Chicken and Herbs Soup
1 can Diced Tomatoes- drained
2 Tbsp Ground Cumin
1 Tsp Garlic (powder or fresh)
2-3 Tbsp Cilantro (fresh or dried)
1 tsp Montreal Chicken Seasoning blend
8 oz Sour Cream
2 Cups Mexican Blend Shredded Cheese
1 cup Shredded Cheddar Cheese
8 Burrito sized flour Tortillas
Be sure to use a slow cooker bag in your Slow Cooker!
Place Frozen Chicken, Cream of Chicken and Herbs Soup, Drained Diced Tomatoes, Cumin, Garlic, Cilantro and Montreal Chicken Seasoning into the slow cooker.
Cover and Cook on HIGH for 5 hours, Stirring once to mix all ingredients together.
AT HOUR FIVE:
Using a slotted spoon, remove chicken and tomatoes from slow cooker and place into a large mixing bowl.
Leave cooker on HIGH to reduce the sauce left in the slow cooker while you prepare the burrito stuffing.
Using a fork and a sharp knife, shred/rough dice the chicken meat in the mixing bowl.
Add Sour Cream and Mexican Cheese. Stir well to combine.
Lay one tortilla on counter top (line counter with wax paper to reduce any mess) and place 2-3 heaping TBSP of filling onto the bottom half of the tortilla.
Fold bottom half of tortilla upwards to the center of tortilla.
Fold sides of tortilla inward (about one inch or so).
Then fold over again to the end of the tortilla.
Place Burritos into a 13 x 9 baking dish sprayed with cooking oil.
Spoon 2-3 TBS of the sauce from the slow cooker over the burritos (not enough to entire coat the top and sides)
Sprinkle burritos with cheddar cheese.
Add another 2-3 TBSP of sauce over the cheese, (be sure to cover all the corners and edges of burritos with a light layer of sauce)
Bake at 350 degrees F 20-30 minutes, until cheese is melted and sauce is bubbly and hot.
Serve with a light salad and Spanish Rice to a complete meal.

Teaches my heart that All is Possible,
All is Ready Standing, Waiting upon my own Acceptance,
My own Belief, my own Unfettering Faith
To Set Free the wheels of the universe
And Create my Heart’s Desire;
Yet in this dark and weary place,
Where fear crushes dreams
And doubt hangs hopes,
What is Remarkably Possible if often considered improbable,
And Faith sits down in the shadows, her hands tied.
The slippery slope of lost Hope
Dashes Charisma against the rocks and shakes Vigor to the core;
Compressing Life to only what is seen, felt, heard.
Lost are the Whispers,
Lost are the Potent Promises that Move Mountains,
Lost are the Smiles of Satisfaction and Purpose.
Still, even in this dark place, where Angels wait, muted by skepticism;
When all is clouded o’re and dim,
One Word shall Lift the Indomitable Spirit,
One Affirmation will Raise the Irrepressible Soul;
Shattering cynicism, Collapsing disbelief,
And Building Bridges to the Unimagined.

I saw this owl perched in the middle of a field of bushes at first. The sun was getting low so I felt lucky to have found her before it became too dark to photograph. She flew low over the foliage and dropped into them for a moment – disappearing from view. A blur of […]
